Homemade Twix Bars

Twix bars were one of my absolute favorite candies growing up. Something about the combination of caramel and shortbread cookie was irresistible, and anything can only get better once it’s covered in chocolate. While I loved candy my whole childhood (and still do), as a nutritionist it really bothers me how much high fructose corn syrup, artificial colors, chemicals, and preservatives are in candy these days, and I actually find those processed candies significantly less enjoyable than real, high quality chocolate and baked goods.

These all-natural imitation Twix Bars have no grains, dairy, refined sugars, or any processed ingredients, and I promise are DRAMATICALLY better than any manufactured-candy out there.

Ingredients

Cookie Base:⁣
1 1/2 cups almond flour ⁣
3 Tbsp coconut oil ⁣
2 Tbsp maple syrup⁣
1 tsp vanilla extract ⁣
1/4 tsp salt⁣

Almond Butter Layer:⁣
2/3 cup unsalted almond butter⁣
1/4 cup maple syrup ⁣
1/4 cup coconut oil⁣
1 tsp vanilla extract⁣
1/4 tsp salt⁣

Chocolate Layer⁣:
1/3 cup dark chocolate chips ⁣
1 Tbsp coconut oil ⁣

Directions

Preheat your oven to 350. Combine cookie base ingredients and mix until chunky. Transfer into an 8x8 baking pan lined with parchment paper, and press down to pack flat. Bake for 10 minutes. Remove from the oven and while it cools, mix together almond butter layer ingredients in a saucepan and heat on low until it bubbles, mixing well so it doesn’t burn. ⁣

Pour almond butter layer over cookie base and spread with a spatula so it’s completely covered. Place in the freezer for 20 minutes to solidify. ⁣Melt chocolate chips with coconut oil in the microwave for 1 minute. Pour over almond butter layer and tilt the pan side to side to cover completely. ⁣Place in the refrigerator for ~1 hour to harden, and cut into bars. Enjoy! Store in the refrigerator.
