I find most pre-made cauliflower crusts contain either cheese, rice flour, or other grains, so it can be hard for someone trying to avoid these foods to find a suitable crust. Additionally, many people choose the cauli crust route for a lower-carb higher-fiber pizza crust option, but don’t realize that the store-bought crusts that add gluten free grains as a filler defeat a lot of that purpose. Cauliflower and grain-free flours like almond flour are more expensive ingredients, so food companies try to sneak in cheap flours and fillers to cut costs and improve the shelf life of their products.

Ultimately, the best way to do cauliflower crust is to make your own! The freshness and high quality ingredients will not only taste better, but are a much healthier option (and a lot of fun to make!).

Ingredients

Cauliflower Crust⁣⁣:
1 head cauliflower⁣⁣
1 1/2 cups almond flour⁣⁣
2 eggs⁣⁣ (for a vegan version sub 2 Tbsp flaxseed + 6Tbsp water)
1 tsp oregano⁣⁣
1 tsp basil⁣⁣
1/2 tsp onion powder
Dash of salt and pepper ⁣⁣
⁣⁣
Tomato Sauce⁣⁣:
1 can crushed tomatoes ⁣⁣
1/4 cup chopped onion ⁣⁣
1 tsp basil ⁣⁣
2 tsp Italian seasoning⁣⁣
1 tsp garlic powder⁣⁣
Dash of salt⁣⁣
⁣⁣
Toppings:
1 cup vegan mozzarella cheese ⁣⁣
1 clove chopped garlic
1/4 cup chopped mushrooms ⁣⁣
1/4 cup chopped broccoli ⁣⁣

Directions

Cook the whole head of cauliflower in an instant pot for 4 minutes, or chop into florets and roast in an oven at 350 for ~20 minutes. Transfer to a bowl and mash cooked cauliflower with a fork or potato masher. Transfer to a dish towel (cheese cloth will work better if you have that!) and squeeze out as much water as possible, this will take a few minutes (and is a great upper body workout). ⁣⁣This step is very important, even if you think you’re done, keep going!

Transfer to a bowl and mix in the rest of your crust ingredients. Combine well and then press and flatten into your desired crust shape onto a baking sheet lined with parchment paper. Push up the edges a bit so the sauce stays in place later. Bake at 375 for ~20 minutes or until solid enough to flip. Flip and bake for another 10 minutes. ⁣⁣

While it bakes, combine your sauce ingredients and heat in a saucepan over medium heat. ⁣⁣After your crust is done, take it out of the oven and flip it back over. Cover with sauce, toppings, and garlic.⁣⁣

Bake for another 10 minutes or until cheese is melted. Enjoy!
