A summer-inspired salad full of protein, fiber, and healthy fats to keep you full and satisfied. Strawberries and spinach are one of my favorite complementary ingredients, the juicy sweet strawberry flavor + crisp spinach makes for a fresh & zesty combo! I love adding fruit to salad to add some depth of flavors, and it completely eliminates the need for a dressing.

This salmon was baked in cloves, fennel, ginger, and garlic for an earthy, Mediterranean-inspired flavor and topped with sautéed onions.

Ingredients

1 1/2 cup spinach ⁣
3/4 cup chopped carrots ⁣
1/2 sliced avocado⁣
1/2 cup roasted mushrooms⁣
1/4 cup sliced strawberries⁣
5 oz baked spiced salmon⁣

Directions

Combine all ingredients in a salad bowl and toss. Enjoy!
