Crispy Cauliflower Patties
What started as a veggie-spin on burgers turned into a low-carb spin on latkes! These cauliflower patties can work as the star of your meal or a fun side dish, and are a delicious way to sneak in veggies for kids or picky eaters. I love cauliflower for its versatility — its so easy for it to take the place of another food, and it takes up whatever flavor you cook it with. Change up the spices to keep it interesting, or throw a dollop of applesauce on top latke-style to add a dash of sweetness.
Ingredients
1 head cauliflower
1 cup almond flour
2 eggs
2 Tbsp Italian seasoning or Herbs de Provence
Optional: applesauce topping
Directions
Preheat your oven to 375. Cut the cauliflower into florets and lay on a baking sheet. Roast in the oven until brown, ~25 minutes. Pressure cooker option: put the whole head in a pressure cooker for 3 minutes. Transfer to a bowl and mash with a potato masher or fork until smooth, but leaving it a little chunky to add some texture. Add in the almond flour, eggs, and seasoning and mix together. Heat a pan on medium and scoop the batter into patties on a pan, and cook on each side until it browns. Enjoy!
