This is a super easy plant based alt bacon! I used an air fryer to get so much crispiness, but a regular convection oven or oven will work too. The maple caramelizes when heated to help create that almost-bacon smokey flavor, you can also add a little mesquite powder to enhance the smokiness if you have it!⁣ Not only is this a great way to sneak in your veggies, but the carrots are high in Vitamin A, which is important for eye, skin, & hair health, and supports a healthy immune system.

The carrots shrink down a fair amount when they’re cooked, so if you’re making these for a group definitely double or triple the recipe!

Ingredients

4 large carrots⁣
2 Tbsp maple syrup ⁣
1 tsp cinnamon⁣
1 tsp ground ginger⁣
1 tsp paprika⁣
Dash of chili powder⁣

Directions

Peel your carrots and slice thinly lengthwise. Combine the maple syrup and spices in a medium sized Tupperware and mix together well. Add your carrot slices to the Tupperware, close the lid and shake well to completely coat all of the carrots in your marinade. Lie carrots flat and cook in the air fryer / convection oven on 400 for 13 minutes, or in a regular oven on 400 for 25 minutes. ⁣Make sure to keep an eye on them because the cooking time will depend on how thinly you sliced them.
