Chewy Lemon Cookies
These soft chewy cookies are grain free, dairy free, and use applesauce as the main sweetener (+ a little coconut sugar ) and have a fun little zing from the lemon flavor. They’re the perfect bright cookie for spring and summer, and are a light and fluffy treat. Typically I’d use lemon zest for a cookie like this, but I went with lemon juice and it was incredible! If you prefer to use zest, I included the substitution below.
Ingredients
1/2 cup applesauce
1/4 cup coconut oil
1 tsp vanilla extract
1 egg
2 cups almond flour
1/4 cup coconut sugar
1 tsp baking powder
2 1/2 Tbsp lemon juice (or 1 1/2 tsp lemon zest)
Directions
Preheat your oven to 350. Combine all the wet ingredients except lemon juice, then stir in the dry. Add the lemon juice and mix well. Drop into cookies on a baking sheet and bake for 17-20 minutes. Enjoy!
