Chocolate Bourbon Truffles
A decadent no-bake treat with a little bourbon twist to bring out the rich cocoa flavor. No refined sugar added (just a drop of coconut sugar!), a soaked raisin base provides the sweetness and the natural creaminess of cashews creates a velvety smooth consistency.
Ingredients
1 cup cashews
1 cup raisins
1/4 cup cocoa powder
3 Tbsp coconut oil
2 tsp coconut sugar
1 Tbsp spiced bourbon
Toppings: ground walnuts, coconut flakes, cocoa powder
Directions
Bring water to a boil and soak the raisins for a few minutes to soften them up. Add all ingredients besides the toppings to a food processor and combine well. Transfer to a bowl and refrigerate for ~15 minutes to allow it to harden. Remove from the fridge and roll into truffle balls with your hands (if it gets sticky just put in the fridge for a few more minutes). Melt dark chocolate chips in the microwave with 1 Tbsp coconut oil for 1 minutes, mix the chocolate to liquefy and pour over the truffles to create a shell. Sprinkle with your choice of toppings. Refrigerate for ~10 minutes to allow them to harden and enjoy!
