There’s nothing better than a high protein, sugar free coffee cake to start the day! This paleo recipe is sweetened with just a little applesauce and is so quick and easy — you really can have cake for breakfast!⁣ This recipe will help pack in your protein & healthy fats in the morning, plus a little extra caffeine, because we all need that sometimes!

Ingredients

🌱 4 eggs⁣
🌱 2/3 cup almond butter⁣
🌱 1/2 cup applesauce ⁣
🌱 1 Tbsp apple cider vinegar⁣
🌱 1 tsp baking soda⁣
🌱 1 Tbsp instant coffee⁣
🌱 3/4 cup dark chocolate chips⁣

Directions

Preheat your oven to 350. Combine all ingredients into a bowl and mix well. Coat a loaf pan with cooking spray of choice and pour the batter in. Cook for ~20 minutes, then pull out and sprinkle some more chocolate chips on top. Cook for 5-10 more minutes. Enjoy!
