Savory Protein Muffins

Muffins are one of my favorite foods. They’re so versatile — you can eat them at home, throw them in your bag, eat them on the go, bring them on a trip — there’s no purpose they can’t serve. I put a spin on a traditionally sweet food to make these savory protein muffins featuring Trader Joe’s Everything But the Bagel seasoning…the most unreal combo of seeds and spices around!

This recipe is crazy high in protein and fiber, so these make the perfect power breakfast or a mid-day snack that keeps you full and satisfied.

Some egg whites are pasteurized in a way that make them a little less fluffy to bake with. For the best texture use the whites from whole eggs. They’ll taste great no matter what you use, but they’ll be a little more dense and won’t rise as much with certain egg white brands (this goes for all baking that uses egg whites!).

Ingredients

1 cup almond flour ⁣⁣⁣
3 Tbsp coconut flour⁣⁣⁣
3 Tbsp whole or ground flaxseed ⁣⁣⁣
1 tsp baking soda ⁣⁣⁣
4 egg whites ⁣⁣⁣
1 whole egg⁣⁣⁣
1 Tbsp apple cider vinegar ⁣⁣⁣
1 Tbsp water ⁣⁣⁣
2 Tbsp Everything But the Bagel seasoning

Directions

Preheat your oven to 350. Combine dry ingredients, then add the wet ingredients. Mix in the Everything But the Bagel, and divide evenly in a muffin tray. Sprinkle the top with more Everything But the Bagel to taste. Bake for 20 minutes. Enjoy!
