Chewy Chocolate Chip Cookies

Who isn’t a sucker for a good chocolate chip cookie?? This recipe uses applesauce as it’s main sweetener, and not only is that an extremely effective sugar alternative, but it adds a crazy amount of moisture and fluffiness to the cookies. I add a dash of coconut sugar not only to lend an extra drop of sweetness, but coconut sugar has a hint of coconut flavor that adds depth to a vanilla cookie base.

Ingredients

1/2 cup applesauce⁣
1/4 cup coconut oil⁣
1 egg⁣
1 tsp vanilla extract⁣
2 cups almond flour⁣
1/4 cup coconut sugar⁣
1 tsp baking powder⁣
1/2 cup dark chocolate chips⁣

Directions

Preheat your oven to 350. Mix wet ingredients together then add in dry and mix well. Add in chocolate chips and mix. Drop small spoonfuls of dough onto a baking sheet and flatten them a bit (they don’t spread much). Bake for 15 minutes, let cool, and enjoy!
