Cauliflower Hummus

Is there anything cauliflower can’t do??

Legumes can be really hard to digest for some people because of the type of carbohydrate they contain. Our bodies can pretty easily digest short-chain carbohydrates (called monosaccharides, think cane sugar and honey) and long-chain carbohydrates (called polysaccharides, think fiber), but we sometimes have trouble with the medium-chain carbohydrates (called oligosaccharides), which are found in legumes like chickpeas, lentils, and beans.

When we have trouble breaking down these carbohydrates, the good bacteria in our gut tries to help us out by fermenting the parts we can’t break down, which leads to bloating and gas — not very enjoyable!

This is why some people may choose to avoid legumes if they cause particularly bad stomach upset, but that doesn’t mean they have to miss out on hummus!

This hummus recipe is legume-free and uses a cauliflower base for extra fiber, with tahini for creaminess and healthy fats, and spiced to perfection with authentic Mediterranean spices.

Ingredients

16 oz (1 pound) cauliflower rice ⁣
2 Tbsp olive oil⁣
1/4 cup tahini
1 tsp sea salt ⁣
1 tsp cumin⁣
2 Tbsp garlic powder⁣
1 tsp smoked paprika ⁣

Directions

Spread cauliflower rice on a baking sheet and roast in the oven at 420 for 20 min, or air fryer at 400 for 12 min. Combine roasted cauliflower, olive oil, and tahini in a food processor and blend. Add the spices and blend until creamy and smooth. Transfer to a bowl and garnish with a dash of smoked paprika. Enjoy!
