Protein Crêpes with Berry Compote

The most luxurious way to start your morning — feel like you’re in small cafe in Paris from the comfort of your own kitchen, and make it healthy! This recipe is the perfect high protein workout recovery or a filling, lean way to start your morning. The berries and chia seeds in the compote add fiber, and the cashew yogurt is a great source of healthy fats for a perfectly balanced meal. This recipe is also WAY faster to make than it looks, and makes you feel like a gourmet chef!

Crêpe Recipe:

Ingredients

🌱 3 egg whites⁣
🌱 1 whole egg⁣
🌱 22g protein powder⁣
🌱 1 Tbsp coconut flour⁣
🌱 1/4 tsp vanilla⁣
🌱 1/4 tsp cinnamon⁣
🌱 1 cup plain cashew yogurt ⁣

Directions

Combine crepe ingredients (besides yogurt) in a bowl. Heat a pan on medium-low and coat with cooking oil of choice. Pour batter to thinly cover pan, this recipe will make 3 crepes total in a small pan. Once it browns on one side (~1-2 minutes), flip crepe, and wait for it to brown on the other side (~1-2 minutes). Repeat for other crepes. Once removed from heat, dollop 2 scoops of yogurt at the edge of the crepe, covering about 1/4 of the crepe each. Starting with the edge holding the yogurt, roll the crepes up, secure with toothpicks if necessary.

Berry Compote Recipe:

Ingredients

1/2 cup frozen strawberries⁣
1/4 Cup frozen blueberries⁣
2 tsp chia seeds⁣
3 Tbsp water⁣

Directions

Melt frozen berries in the microwave for 1 minute. Combine all compote ingredients into a blender and blend until smooth.⁣ Drizzle over crepes.
