Paleo Apple Crisp

Dates really are nature’s candy! They’re the perfect sweetener when you’re looking for a healthy treat, no added sugar needed! Dates are also packed with fiber, so their sugar content won’t spike your blood sugar the same way refined sugar does. The fiber slows down digestion, slowing down the rate that the sugar enters your blood, preventing a spike and crash.

This healthy apple crisp is full of fiber and healthy fats, you’ll be satisfied after just one piece…but it’s so good you’ll be back for more!

Ingredients

4 apples (I used gala)⁣
1 cup dates⁣
3 cups water⁣
1 cup pecans⁣
1/8 cup coconut flakes ⁣

Directions

Preheat your oven to 350. ⁣Bring the water to a boil in a saucepan and add in your dates to soften, simmer on medium-low. While they boil, peel your apples and slice very thinly long-way (the thinner the better!). Lie your apple slices flat on the bottom of a square baking pan, then stack them on top of each other after covering the bottom to create layers. ⁣

Pour the boiled dates + water into a blender and blend to create the paste. Pour your date paste over the apple slices, covering completely. ⁣

Rinse and dry your blender, then blend your pecans to make a crumble, and sprinkle over the top of the date paste, covering completely. ⁣Bake for ~20 minutes. Sprinkle coconut flakes on top, and then bake for 5 more minutes. Enjoy!
