Green Protein Smoothie Bowl

There’s no better way to sneak some extra greens into your day than a green protein bowl! You can pack in a TON of spinach or kale without feeling like you’re eating salad all the time. Green protein smoothie bowls are the perfect way to add some greens to your breakfast, a meal that many of us skip the greens at. This recipe uses spinach, an incredible source of plant-based iron. The mango contains Vitamin C, which helps your body absorb the iron from plants more efficiently by breaking the iron from the bonds holding it to the food.

One of the reasons vegetarians can have low iron levels is that the type of iron found in plants — called non-heme iron — isn’t absorbed as efficiently as the type of iron found in animal sources (called heme iron). Adding some Vitamin C to your plant-based iron can help make sure you’re getting enough iron from plant foods!

Ingredients

1 cup spinach⁣
1/2 banana ⁣
1/2 cup frozen mango ⁣
1/2 cup frozen cauliflower⁣
22g protein powder⁣
1 Tbsp chia seeds⁣
1 Tbsp flaxseed ⁣
1 1/2 cup almond milk ⁣
Toppings: almond butter, chia seeds, sliced banana, mango⁣

Directions

Add all ingredients to a blender and blend until creamy. Pour into a bowl and top with your favorite toppings! Enjoy!
