Chocolate Banana Protein Muffins

The only thing I love more than a high protein snack is a PORTABLE high protein snack. These Chocolate Banana Protein Muffins have 8g protein each, making them the perfect protein snack or on-the-go breakfast. Throwing two muffins in my bag before heading to a morning workout is so easy, and is a great way to make sure I’m ready to refuel right after, even if I’m heading straight to work!

Ingredients

4 ripe bananas (mashed)⁣
3 eggs⁣
2 tbsp coconut oil⁣
1/3 cup almond butter ⁣
1 tsp vanilla ⁣extract
1/3 cup coconut flour⁣
1 tsp baking soda⁣
1 tsp baking powder ⁣
1 tsp cinnamon ⁣
40g chocolate protein powder (usually 2/3 cup for most brands)

Directions

Preheat your oven at 350. Mix all wet ingredients, then add in coconut flour, baking soda, baking powder, and cinnamon and mix. Add protein powder and combine well. Distribute evenly into a muffin tin and bake at 350 for 25 min. Enjoy!!
