Cherry Coconut Granola Bars

Homemade gluten free, high fiber, no bake bars that are an amazing on-the-go snack, or a granola crumble to add to yogurt, cereal or oatmeal! Dried bing cherries offer a tart flavor that doesn’t need much added sweetness, making this a great alternative to most of the high-sugar granola bars out there. The oat base paired with chia seeds offers a ton of fiber, complex carbs, and healthy fats to keep you full and satisfied until your next meal without any blood sugar spikes and crashes, preventing you from getting hungry again quickly.

Ingredients

1/4 cup chopped almonds⁣
3/4 cup gluten free oats⁣
1/8 cup sesame seeds⁣
4 Tbsp chia seeds⁣
3/4 cup chopped dried bing cherries⁣
1/4 cup coconut flakes⁣
1/2 Tbsp vanilla powder⁣
1 Tbsp coconut oil⁣
1 tsp maple syrup⁣
5 Tbsp water⁣

Directions

Mix dry ingredients in a bowl. Mix together coconut oil, maple syrup and water, and pour into the dry ingredients. Mix together well. Transfer into a baking pan and pack in the granola flat. Freeze for 3 hours or refrigerate overnight before cutting into bars.
